The story

Husband-and-wife team Menashe (savory) and Gergis (pastry) took over a former warehouse and built an Italian restaurant unlike anything the city had: whole-animal butchery, an ambitious in-house curing program, wood-fired everything and desserts good enough to justify the visit alone. A decade-plus later, critics keep re-reviewing it and reaching the same verdict — the hype still holds.

What to order

The roasted bone marrow with crisped spinach gnocchetti and aged balsamic is the most-ordered dish in the house and earns it. The cavatelli alla norcina — ricotta dumplings with pork sausage and black truffle — is the pasta to fight over. Start with the house-cured salumi board and a blistered pizza from the wood oven, consider the whole grilled fish or a dry-aged steak, and end with Gergis’s bittersweet chocolate budino tart, one of the city’s defining desserts.

The space

Industrial bones worn proudly: exposed brick and ducts, chandeliers fashioned from old rendering equipment, an open kitchen roaring at one end and a strung-light patio outside. The room is loud, dark and electric — a dinner party at full volume, every night.
