Before Eggslut, the breakfast sandwich was an afterthought; after it, whole menus across America were rebuilt around soft scrambled eggs on brioche. Chef Alvin Cailan’s egg-obsessed counter inside Grand Central Market is where that shift started, and more than a decade on, the line still forms before the griddle is fully hot.

The story

Cailan launched Eggslut as a food truck in 2011, cooking eggs with the technique of a fine-dining kitchen and the swagger of street food. In 2013 it landed its first permanent counter inside DTLA’s historic Grand Central Market, and the timing was perfect: the stall became a symbol of the market’s revival and one of the most copied breakfast concepts in the country.

What to order

The Slut is the namesake and the thesis: a cage-free egg coddled over silky potato purée, poached in a glass jar, showered with gray salt and chives, served with toasted baguette for scooping. The Fairfax — soft scrambled eggs with chives, cheddar, caramelized onions and sriracha mayo on brioche — is the best-seller. The bacon, egg and cheese satisfies traditionalists, while the Gaucho piles seared wagyu tri-tip under an over-easy egg for those treating breakfast as a main event.

The space

A gleaming stainless counter under a neon sign inside the century-old market hall: a row of stools, cooks working the flat-top in full view, and the churn of Grand Central Market — butchers, taco stands, coffee roasters — swirling around you.
