These ten rooms read as a chronicle of downtown Los Angeles told through architecture. Philippe The Original has stood since 1908, keeping sawdust on the floor and walls papered with historic front pages — a working museum of the old city on the edge of Chinatown. République occupies a 1929 landmark raised for Charlie Chaplin, under brick arches that once sheltered Campanile; Eggslut works a stainless counter inside the century-old Grand Central Market; Bestia lit a former Arts District warehouse with chandeliers made from old rendering equipment.
The second axis is authorship. French immigrant Philippe Mathieu opened the deli in 1908; his family has run it since the 1920s. Alvin Cailan moved Eggslut from a food truck into the market in 2013, as the hall revived. Walter and Margarita Manzke share République, where her pastry work took a James Beard Award in 2023. Stephanie Izard brought Girl & the Goat Los Angeles to the Arts District in 2021, and Gilberto Cetina built Holbox steps from his father’s stall in the same mercado. For a large table that agrees on nothing, JOEY DTLA and Girl & the Goat Los Angeles have the space — a glossy hall opening onto a heated year-round patio under the towers, and a light-flooded Arts District room around an open hearth. For a program rather than a plate, Perch keeps live performers most evenings atop the historic Pershing Square Building and takes guests until late, while 71Above times its seatings to the sunset like a theater ticket. The calmest terrace is Maccheroni Republic’s hedged courtyard with string bulbs.
The borders are worth naming. This is downtown — the historic core, the Arts District, the towers — with only République in Miracle Mile and Holbox by Exposition Park outside it. The kitchens lean European: two French, two Italian, American classics and one Mexican seafood counter, while no Japanese, Korean, Chinese or Thai room made the ten. Nothing here is pitched at children, and Perch goes adults-only late on weekend nights.
