Chef Alvin Cailan’s egg-obsessed counter inside Grand Central Market is where that shift started, and more than a decade on, the line still forms before the griddle is fully hot.

The story

Cailan launched Eggslut as a food truck in 2011, cooking eggs with the technique of a fine-dining kitchen and the swagger of street food. In 2013 it landed its first permanent counter inside DTLA’s historic Grand Central Market, and the timing was perfect: the stall became a symbol of the market’s revival and one of the most copied breakfast concepts in the country.

What to order

The Slut is the namesake and the thesis: a cage-free egg coddled over silky potato purée, poached in a glass jar, showered with gray salt and chives, served with toasted baguette for scooping. The Fairfax — soft scrambled eggs with chives, cheddar, caramelized onions and sriracha mayo on brioche — is the best-seller.
