The story
Chefs Walter and Margarita Manzke opened République on La Brea in the Miracle Mile area, layering their own chapter onto a storied address. Walter runs the savory side with classic French technique and Californian produce; Margarita’s pastry program earned her the James Beard Award for Outstanding Pastry Chef in 2023 after years of consecutive nominations. The result is a rare all-day restaurant where the croissant and the tasting menu are held to the same standard.
What to order
Morning: anything from the pastry case — butter-lacquered croissants, kouign-amann, seasonal fruit tarts. Brunch has cult status, led by the kimchi fried rice with a fried egg and the shakshouka baked in its skillet.
